Why I Love This Recipe


Ingredients You'll Need

Dry:
1 cup white flour
1/2 cup wheat flour
2/3 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup oats
Wet:
2 large, ripe bananas
1/4 cup oil
1 tsp vanilla extract
2 T ground flax seed
6 T pure water
Soy milk, as needed


Directions

Pre-heat the oven to 350F.


Measure out all the dry ingredients and place in a single bowl.


In a separate bowl combine all the wet ingredients, except for the flax, water, and soy milk.


In a small 3rd bowl combine the flax and water. Mix well and add to the wet ingredients.


Add the wet ingredients to the dry ingredients. Add soy milk as needed to moisten batter.


Portion 1/2 T into mini muffin cups.


Bake for 20 minutes, or until golden brown, and holding shape. You may test with toothpick.
