Vegan Choc Chip Cookies

Serves 12 cookies | Prep Time 15 minutes | Cook Time 30 minutes

Ingredients

1/2 cup Nuttelex original - or your favorite vegan butter
1/4 cup raw sugar (I blend it so its finer)
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon of nutmeg
1/2 cup of quick oats
1 cup corn flour (sifted)
100g of Sweet William original chocolate - or your favorite vegan chocolate


Vegan butter, sugar, vanilla, cinnamon & nutmeg - beat all these ingredients together. The secret to these biscuits is that you beat the butter mixture for at least 2-3 minutes, so its soft and fluffy.



Add oats and beat, add flour and beat. (Now pre heat oven 180°C).



Now add the chocolate (if its a block I chop it up into little choc chip pieces, unless you are using vegan choc chip pieces) and stir it with a spoon.



In a muffin tray, lay 12 paper muffin cups. Roll the mixture into balls and put into each muffin cup and press down. By doing it this way all cookies turn out the same size and it is also easier for when you take the cookies out of the oven as when they are hot they can crumble. Bake for 30 - 35 minutes depending on your oven.



When baked, take them out of the muffin cups straight away (if you leave them in the cups when they start to cool the chocolate sticks to the cups). Let them cool for 5 minutes so you don't burn yourself but eat one when they are still warm and the chocolate is still warm inside. So yummy!
