Vegan Cream Cheese Frosting
1 c powdered sugar
1/2 c Earth Balance stick
2 T soy milk
1/2 t vanilla extract
1 t apple cider vinegar (fine without)
1/4 t lemon juice (fine without)
1/4 t salt
Place all ingredients in a bowl and mix with a hand mixer. The mixture should be smooth and creamy. Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 6 months. This recipe makes about 2 cups of frosting, or enough for about one layer of an 9 inch diameter cake.
