Vegan Egg Nog Bread

1 pkg. yellow cake mix
1 pkg. instant vanilla (or french vanilla) pudding mix
4 "eggs" (egg substitute)
3/4 cup sherry
3/4 cup oil
1 tsp. nutmeg

Mix all ingredients together in mixing bowl and beat 3 minutes on medium speed. Bake at 350 degrees for 40 minutes in a large loaf pan or 30 minutes in 4-5 small loaf pans (fill not more than 1/2 full). Makes great gifts for holidays.

This recipe comes from my mom's favorite community cookbook. Mom likes to bake little quick breads to give away in gift baskets over the holidays. I love her pumpkin and zuccini breads, but I wait all year long for her egg nog bread! The best part is that it doesn't actually have egg nog in it, so it was easy for me to veganize! Unfortunately, the vegan version has a tendency to fall in the middle (I guess the eggs make it rise), but it's still delicious.
