1 cup all purpose flour
1 tbsp sugar
1 tsp baking soda
a pinch of salt
1 cup soy milk
1 tbsp veg. oil
1 tsp vanilla extract
Combine dry ingredients in a bowl
In a separate bowl, combine the soy milk, oil and vanilla.
Then add to dry mixture.
Don't over mix the batter though, a couple of lumps are ok.
Cook on preheated, lightly oiled pan.
Turn when bubbles form on surface and edges begin to dry.
Pairs Well With
Tip - I use a lightly greased 1/3 cup to pour the batter into the pan as it keeps them all a similar size.
I like to cover my pancakes with maple syrup and eat with blueberries.
