Vegetable Baked Brie
8 oz wheel of Brie
1/2 cup diced onion
1/2 cup diced zucchini
1/2 cup diced red pepper
1 Tbs olive oil
1/2 tsp chopped garlic
I added some dried thyme
Split the Brie in 1/2 making 2 rounds.
Saute the onion in the oil for about 2 minutes. Add the zucchini and red pepperand garlic and saute till vegtables are tender.
I added some dried thyme to this mixture.
Spoon the sauted vegtables over the brie 1/2 then top with the remaining Brie half.
Bake at 375 for 15-18 minutes or until the cheese melts.
Serve with the crackers.
Personally I think that this will serve 6-8
