Ingredients You'll Need
Lasagna noodle (2 packs)
mushrooms (2 lbs)
carrots (multi colored)
5 squash or zucchini
Begin by preheating the oven to 400 degrees
clean and slice the eggplant into strips.
Season both sides of the eggplant with salt and pepper.
Let sit for 15 minutes, and pat dry.
Place onto pan and bake both sides for 15 minutes.
dice onions and chop carrots
Caramelize these with thyme, salt, and pepper
Add marinara sauce and prego sauce. Bring to a simmer.
set oven to 375
chop mushrooms, squash/zuchinni and season with salt and pepper
Bake till lightly tan
Boil Lasagna noodles and trim noodels to fit in tray
Layer the materials into a 9x9 pan as follows:
squash/zuchini and mushrooms
bake at 375 covered with foil for 15 minutes
bake at 375 uncovered for 10 minutes
let cool, and enjoy.
