Vegetable Packed Tortilla Soup
4 cups vegetable broth
2 celery stalks
About 1/2 red pepper
About 1/4 red onion
1 garlic clove
Salt and pepper to taste
Dash cyan pepper (if you like a little spice)
16 oz canned corn
1 cup cooked brown rice
Baked corn chips
In to a blender add: broth, tomatoes, carrots, celery, red pepper, onion, garlic and spices. Blend on high until well incorporated.
Add in corn and rice and give it a few pulses.
Pour mixture into a large pot and bring to a boil and then let simmer.
Add in some shredded chicken if desired or just leave as is for a delicious meat free soup.
Garnish with olives, avocado and corn chips if desired.
