VEGETABLE RATTATOUILLE

Ingredients

  • 2 cups sliced onions (thin)
  • 2 tbl olive oil
  • 3 green peppers (sliced)
  • 3 zucchini (sliced)
  • 2 minced garlic cloves
  • 5 sliced fresh tomatoes
  • 1 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  • Saute onions in olive oil till tender. Remove from pan and set aside. Saute peppers and zucchini till tender. Place vegetables and tomatoes in baking dish. Stir in garlic, salt and pepper. Cover and bake at 325 degrees for 50 minutes.
