Vegetable stew (leco)
6-7 green peppers ( I like to use the cubanera peppers, but any green peppers wild do)
4 medium tomatoes
1/2 cup of chicken stock
1/2 cup of sour cream
Chop the onions, (does not have to be too small cuts), sauté onions in olive oil, when translucent and little bit browned add green pepper cut into rings or any shape you like. Add salt, pepper. Sauté together about 5 minutes, add chopped tomatoes, sauté 5-10 minutes more. Add sour cream, simmer 2 more minutes and serve with crusty bread. Delicious!
