- Veggies and protein:
- one block of firm/ extra firm tofu sliced into 1x1/4 inch strips
- 1/2 green bell pepper sliced
- 1/2 yellow bell pepper sliced
- 1/2 red bell pepper sliced
- 1/2 large onion sliced
Toss the veggies and protein in the marinade and set over night. Brown the tofu first in a skillet and set aside. Repeat for the veggies and serve hot with tortillas and your favorite tex-mex condiments! Serves about 4.
