Vegetarian Kreplach

Kreplach (a sort of wanton) is one of my specialties. Though I love meat, I decided to make a vegetarian version for my brother when he became a vegetarian.

  • Cooking Time: 15
  • Servings: about 3 dozen
  • Preparation Time: 5
  • Filling:
  • 1 cup fresh spinach
  • 1/2 cup walnuts
  • 1/2 of a red pepper
  • handful of baby carrots
  • 2 Tbsp. EVOO
  • 1 Tbsp. basil
  • 2 Tbsp. chopped cilantro
  • salt and pepper to taste

DIRECTIONS

Make standard dough (I'll update this later with instruction once I find them)

Place all ingredients in food processor and chop until well mixed and even consistency

fill each kreplach and boil for about 10 minutes

I usually make them in soup, but they can be fried as well
