Vegetarian Pasta Salad Warm Potato Salad with Honey Dressing

Serves 6 | Prep Time | Cook Time


1 box pasta (rotini, bows, macaroni)
1 cucumber
1 cup grape tomatoes
1 cup Italian dressing
1 can black olives
1 can artichoke hearts
McCormick Salad Supreme seasoning, to taste
1/3 cup cider vinegar
2 tablespoons vegetable oil
¼ cup honey
1 tablespoon Dijon mustard
1/8 teaspoon hot sauce
1 ½ pounds red bliss potatoes
5 slices applewood bacon, crisp, crumbled
2 tablespoons parsley, chopped
2 tablespoons green onion, chopped
½ teaspoon salt

Boil a pot of water on the stove. Add pasta until cooked according to box directions. Rinse & cool. Add to bowl with chopped & pared cucumber, tomatoes, Italian dressing, olives & artichokes. Season with Salad Supreme Seasoning to taste. Serve cold.

Combine vinegar, oil, honey, mustard & hot sauce; mix well. Add potatoes & mix to coat all surfaces. Cook on medium heat until potatoes are thoroughly heated. Add bacon, parsley, green onions & salt. Toss to mix well. Allow to sit in the refrigerator so that the flavors blend.
