VENISON SAUSAGE 5, PENNSYLVANIA DUTCH STYLE

Ingredients

  • 3 1/2 lbs. venison - defatted and ground
  • 1 1/2 lbs smoked bacon-ground
  • (can be ends/pieces or fresh ground pork)
  • 1/2 cup brown sugar
  • 2 teaspoons salt
  • (add more salt if fresh pork used)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon coriander
  • 2 teaspoon black pepper
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon savory
  • 1/8 teaspoon cumin
  • to taste - hot sauce

Directions

  • Mix all together well.
  • Shape into patties to fry. May be frozen.
