VENISON SAUSAGE 5, PENNSYLVANIA DUTCH STYLE
Venison Sausage 5, Pennsylvania Dutch Style
INGREDIENTS
- 3 1/2 lbs. venison - defatted and ground
- 1 1/2 lbs smoked bacon-ground
- (can be ends/pieces or fresh ground pork)
- 1/2 cup brown sugar
- 2 teaspoons salt
- (add more salt if fresh pork used)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon coriander
- 2 teaspoon black pepper
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon savory
- 1/8 teaspoon cumin
- to taste - hot sauce
DIRECTIONS
Mix all together well.
Shape into patties to fry. May be frozen.
