VENISON SAUSAGE ARKANSAS

Ingredients

  • 6 lbs. venison, cubed
  • 1 1/2 tablespoons black pepper
  • 6 lbs. pork, cubed
  • 1/4 teaspoon allspice
  • 1 1/2 tablespoon garlic powder
  • 1 tablespoon crushed red pepper, to taste
  • 1/4 cup salt

Directions

  • Mix all ingredients and grind several times. Smoking improves the flavor, but sausage may be frozen without smoking in patties, sausage bags, or casings.
