Venison or Pork Sausage

Ingredients

15 lbs. venison or 10 lbs pork loin
2.5 lbs. bacon
3 teaspoons garlic powder
1 teaspoon sage
1 1/2 teaspoons Chinese 5 Spice
10 teaspoons Mrs. Dash
1 1/2 teaspoon cayenne pepper
2 tablespoons fennel
3 tablespoons crushed red pepper
12 tablespoons allegro


This is added to 40 oz. of your favorite sausage mix (Astor, Old Plantation, etc.) I link it in casings and convection smoke for 2 hrs @ 250 Deg.
