VERY FRENCH CREAM BRULEE

Ingredients

  • 2 cup of heavy cream
  • 1/2 teaspoon vanilla extract
  • 8 egg yolks
  • 1/2 cup sugar
  • raw sugar for toping

Directions

  • 1) separate egg yolks from egg whites, put egg yolks in separate bowl ,
  • 2)pour sugar into egg yolks and mix together
  • 3) heat heavy cream to almost a simmer , after cream is heated , slowly add a little bit to the egg mixture , to temper the egg yolks, once eggs are tempered pour the rest of the yolk into the cream.
  • 4) add vanilla
  • 5) fill ramekins ( makes about 6 or so medium size ramekins )
  • 6) in a baking pan fill with bowling water till about halfway up the ramekins place in a 250 oven for one hour
  • 7) after done baking , cool for an hour , then add plastic wrap over the ramekins and let chill for atleast 8 hours
  • 8) before serving add alittle bit of sugar(raw sugar) over the top and take a blow torch and heat until you see a brown coloring
  • 9) then enjoy :)
