Vibrant Stuffed Avocados
1⁄2 tbsp 2 1 1⁄2 tsp 2 tbsp 1⁄2 cup 1⁄2 cup 1⁄2 cup Sprinkle 4
fresh squeezed lemon juice
garlic cloves (pressed)
green onion (finely chopped)
fresh cilantro or 1⁄2 tsp curry powder (or use both)
cooked quinoa (room temp)
fresh sprouts (radish sprouts or mung bean)
paprika (optional) avocados
In a large bowl add the fresh lemon juice, garlic, salt, green onions, cilantro or curry powder and stir.
Stir in the carrots and quinoa.
Carefully cut the avocado in half, lengthwise and scoop the inside of the avocado into the bowl with the rest of the ingredients. Save the avocado shells. Slice the avocado until the pieces are 1⁄4" to 1⁄2" chunks... keep them in the chunks.
￼￼￼￼￼Spoon the mixture into the avocado half shells to serve. Sprinkle paprika on top of the avocados as garnish (optional).
