VIDALIA ONION PIE

Ingredients

  • 2 cups cracker crumbs (Ritz)
  • 1 stick melted butter
  • 2 cups (or more to taste) thin sliced Vidalia onions
  • 2-3 cups shredded cheese of choice
  • 2 eggs
  • 3/4 cup of milk
  • salt
  • pepper
  • herbs of choice

Directions

  • 2 cups cracker crumbs (Ritz)
  • 1 stick melted butter
  • blend together and arrange in a pie pan
  • Saute 2 cups (or more to taste) thin sliced Vidalia onions in butter until translucent. Place in crust. Sprinkle shredded cheese of choice (2-3 cups). Mix 2 eggs and 3/4 cup of milk, salt, pepper and any herbs of choice together and pour on top of onions/cheese.
  • Bake at 350 for about 1/2 hour (pie will be firm)
