Thai... I really can't get enough of this cuisine! Here is a randition of Thailand's staple dipping sauce I learned from a local chef. It is the base of many of their dishes.
It is a great and easy dip for fresh veggies. I love dipping snap peas, carrots and celery in this as a snack. It is also a great sauce for salad wraps, pork, chicken or seafood, as well as a tasty dressing. Try it over a bed of greens and mango/papaya.
Ingredients You'll Need
60 ml (¼ cup) fish sauce
60 ml (¼ cup) rice vinegar
2 tbsp white sugar
125ml (½ cup) water
2 garlic cloves, finely chopped
1 red birdseye chilli, finely chopped
2 tbsp lime juice (* real/fresh lime juice is essential, lime juice from a bottle will ruin it)
