WALNUT APPLE JUICE CAKE
1 c. shortening
2 c. sugar
3 c. flour
2 tsp. baking powder
1/4 tsp. soda
1 tsp. salt
1 1/2 tsp. nutmeg
1 c. apple juice
1 c. chopped walnuts
Apple joice filling
Cream shortening and sugar.
Add eggs one at a time, beating well after each.
Sift together all dry ingredients.
Add to creamed mixture alternately with apple juice.
Add nuts and mix well.
Pour into 3 greased, lined with wax paper, round layer pans and bake at 375 degrees for 25 minutes.
Or: Use two 9-inch square pans, prepared in the same manner, and bake at 375 degrees for 35 to 40 minutes.
Cool 5 minutes, remove from pans and cool on wire racks.
Fill with apple juice filling and cover with a butter frosting.
