  • 2& 1/4 cups Oat bran Cereal (Uncle toby’s blended to flour-like consistency in blender_)
  • Quarter cup chopped nuts
  • Quarter cup raisins/dates/currants or…your own choice
  • 1 tbsp baking powder
  • Quarter cup brown sugar or quarter cup honey or molasses
  • 1 and a quarter cups skim, evap or soy milk
  • 2 egg whites
  • 2 tbsp vegetable oil


  • Preheat oven to 220C
  • Combine oats, nuts, raisins and liquid sweetener
  • Mix oil, milk and egg whites together and add to oat mixture
  • Line muffin tins with paper baking cups and fill with batter..or use silicon ones
  • Bake 15 to 17 mins
  • Test for doneness with a toothpick (should come out moist not wet)
  • Store in a plastic bag..in frig if if not consumed within 3 days
