INGREDIENTS

  • 2 tsp olive oil
  • 1/2 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • 1 lb boneless, skinless chicken breast, diced
  • 1/4 cup dry white wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup uncooked instant brown rice
  • 1 cup fat-free, less-sodium chicken broth
  • 1/2 cup (2 ounces) grated fresh Parmesan cheese
  • 1 tsp dried parsley

This was delicious!!! I end up making this dish a couple times a month. I actually add broccoli or mushrooms into the recipe.
