Waffle berry bread pudding
1 package of frozen buttermilk waffles
1 package (6oz) white chocolate for baking
1 package (12 oz) frozen unsweetened raspberries
1/3 cup sugar
1 Tbs. all purpose flour
1 16oz sour cream
1/2 tsp vanilla
2 Tbs. powdered sugar
Preheat oven to 400.
Cut waffles into 1 inch peices.
Coarsely chop white chocolate
Place half of the waffles in a microwaveable/oven safe glass casserole dish. Sprinkle with half of the chopped white chocolate and half the raspberries. Repeat.
Place dish in microwave on high for 4-5 min or until raspberries and waffles are completely thawed.
In bowl, combine sugar and flour. Whisk sour cream, eggs and vanilla until smooth. pour evenly over top of the waffles.
Bake 30-35 minutes. let stand for 10 minutes. Sprinkle with powdered sugar. Top with whipped cream.
