WARM BLUEBERRY SAUCE
- 1 cup blueberries
- 2 Tbs. unsalted butter, softened
- 1/4 tsp. ground cinnamon
- 1/3 cup granulated sugar
- 1 tbs. corn starch
- pinch of salt
- 3/4 cup water
- 2 tsp lemon juice
In a saucepan, combine well the sugar, cornstarch and salt. Add the water and lemon juice and cook over medium high heat, stirring, until the mixture thickens, about 5 minutes.
Add the blueberries and lower the heat to medium, stirring frequently for one minute. Remove the pan from hat and add the butter and cinnamon. Stir well. Keep warm in a double boiler or over very low heat until served and stir well.
Great on pancakes, waffles, ice cream!
