Wartime Lemon Pie
1 lemon, juice and grated rind
Water, equal to amount of juice
25 large marshmallows cut in half
3 egg yolks, beaten
3 egg whites, beaten with a pinch of salt
Juice and grate rind of one lemon. Add as much cold water as there is juice. Put in double boiler. Add marshmallows.
When thoroughly melted add beaten yolks and cook till thick. Add beaten whites to this mixture.
Cool slightly. Pour into a baked pie shell. Serve with whipped cream topping.
