Watermelon Mint Ice Pops

Serves 8 people | Prep Time 10 minutes | Cook Time 3 hours

Ingredients

-4 cups seedless watermelon, cut into 1 inch pieces
-2 tablespoons sugar
-1/4 cup mint leaves, minced
-2 teaspoons finely grated lemon zest
-pinch of salt


1) Puree the watermelon with the sugar in a blender until smooth


2) Mix in the mint, lemon zest, and salt


3) Pour the mixture into 8 ice-pop molds or 2 standard ice cube trays


4) Freeze until hard, about 3 hours


(Insert ice pop sticks before ice pops are completely frozen)
