Whipped Butternut Squash
1 butternut squash, halved and cleaned
1/4 cup margarine
1/2 cup fat free sour cream (you can use lowfat or regular if you like)
salt and pepper to taste
Preheat oven to 350.
Place butternut squash face down in a baking pan and fill it with enough water to cover the insides. Bake for one hour.
Scoop insides into a bowl and add margarine, sour cream, salt and pepper. Whip until combined.
