WHITE BEAN HUMMUS

Ingredients

  • 1 regular sized can of white beans (Cannellini beans)
  • 1/4 cup tahini
  • juice of half a lemon
  • 1 or 2 cloves of garlic, roughly chopped
  • about 1/4 cup olive oil
  • salt to taste
  • red pepper flake (optional)

Directions

  • Put beans, tahini, garlic, and lemon juice in a food processor or blender and puree until smooth. Slowly add olive oil until desired consistency is achieved. Add salt and pepper flake to taste and blend briefly until combined. I think it is best if you let it sit in the refrigerator overnight to marry the flavors. Serve with veggies like cucumber and sliced sweet peppers, or flat bread or chips. Also yummy as a sandwich spread.
