White Bean Sauce Over Tortellini
1 9-oz package of fresh tortellini
1 19-oz can cannelloni beans, drained and rinsed
1/2 cup vegetable stock
1 Tbsp minced garlic
1 Tbsp fresh lemon juice
salt and freshly ground pepper to taste
fresh basil for garnish
1/2 cup grated parmesan or romano cheese (real or vegan), optional, garnish
Put the cannelloni beans, vegetable stock, garlic, lemon juice, salt and pepper into a food processor or blender, and puree until smooth.
Heat in a large saucepan over medium heat until hot.
Toss with cooked tortellini and serve with optional garnish.
