White Bean Soup
1 tsp extra virgin olive oil
2 garlic cloves, minced
1 (12oz) can Great Northern Beans, drained
1 Tbsp. fresh, crushed rosemary
1/2 tsp. black pepper, fresh ground is best
1 cup low sodium chicken broth
Heat oil and garlic over medium heat for about 1 minute. Add the beans,
rosemary, and pepper. Stir in chicken broth. Bring to a boil and reduce
heat to low. Simmer for about 10 minutes. Ready to serve or cool it a little, and transfer to food processor (I personally like it
better this way).
