Serves Makes about 5 pounds. | Prep Time 5 minutes | Cook Time 30-45 minutesWhy I Love This Recipe
My son's mother in law, Sharon Johnson, gave me this recipe in 1996. Everyone who tastes it, loves it at first bite. It really is that good.
Ingredients You'll Need
4 c. sugar
1/12 c. sour cream
2 sticks butter
14 oz. marshmallow crème
24 oz. good quality white chocolate, chopped
2 c. dried apricots, chopped
2 c. pecans, chopped
Directions
Test your candy thermometer using the instructions in the Chocolate Fudge recipe. Then combine in a large, heavy pan sugar, sour cream, butter, and marshmellow creme. Bring to a boil. Cook to soft ball stage, being careful to wipe down sugar crystals to prevent your candy from being grainy. When softball stage is reached, remove from heat and add chocolate. Using a hand mixer, beat candy until chocolate is melted and candy is creamy. Stir in apricots and pecans, then pour into a 9"X13" well buttered pan and smooth top. Let cool completely overnight, then cut into pieces to serve. Freezes well.
