Why I Love This Recipe

Tips:

If you don’t have individual dessert cups, you can make cupcakes, use a Bundt or other cake pan. Dust the cake with powdered sugar and serve the mousse on the side. Garnish with chocolate shavings and Chocolate Dipped Strawberries


Ingredients You'll Need

6 ounces white chocolate, broken into pieces
1 1/2 cups heavy whipping cream, divided
4 ounces cream cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract


Directions

Microwave white chocolate and 1/2 cup of cream in an uncovered, microwave safe bowl on Medium-High (70%) power for 1 minute; stir. Microwave at an additional 10-15 second intervals, stirring just until melted; cool completely. While cooling, add the cream cheese and stir until smooth into warm chocolate and cream. Beat remaining cream, powdered sugar, and vanilla extract in a mixing bowl until stiff peaks form. (Do not overbeat) Fold melted chocolate and cream cheese mixture into whipped cream; refrigerate.


Assemble Dessert:


Line the bottom of each dessert dish or ramekin with a red velvet cake layer. Spoon a portion of the white chocolate mousse and spread to the outer edges. Add a second cake layer and complete with a final layer of the mousse. Cover with plastic wrap and refrigerate until ready to serve. Just before serving, decorate with chocolate shavings. Serves approx. 6 - 8
