Whole Wheat Berries Salad

Ingredients

1 cup whole wheat berries
enough water to cover 2 inches over wheat berries
1 cucumber diced
2 roma tomatoes diced
5 green onions diced
1/2 bunch fresh mint chopped
1/2 bunch parsley chopped
1 lemon juice
1/4 cup of olive oil
salt and pepper to taste


Cook whole wheat berries in water for 1 hour or until tender.


Drain water and place in bowl then let wheat berries cool.


Mix all ingredients together except for wheat berries.


Mix and toss everything.
