WHOLE WHEAT CHOCOLATE CHIP MUFFINS
Whole wheat chocolate chip muffins
Having a picky toddler who seems to crave carbs inspired me to "trick" her into eating some whole wheat as a healthier alternative. You can make these without the chocolate chips as well.

- Servings: 12 muffins
- Preparation Time: 10 min
- 1/2 cup butter {or butter substitute, such as Smart Balance light buttery spread} softened at room temp.
- 1 cup sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla
- 2 eggs
- 1/2 cup skim or 2% milk
- 2 cups organic white whole wheat flour
- 1/4 cup semi-sweet chocolate chips
DIRECTIONS
Preheat oven to 350
Beat eggs.
Add sugar, baking powder, salt & vanilla. Whisk. Add butter. Beat until fluffy.
Stir in milk.
Slowly fold in flour. Mix until thoroughly moistened.
Add chocolate chips. Mix.
Spoon batter into lined muffin pan, about 3/4 of the way filled. Cook at 350 for aprox 20-30 minutes, or until muffins are a golden brown. Remove from oven and allow to cool. Enjoy!
