WHOLE WHEAT CHOCOLATE CHIP MUFFINS

Whole wheat chocolate chip muffins

Having a picky toddler who seems to crave carbs inspired me to "trick" her into eating some whole wheat as a healthier alternative. You can make these without the chocolate chips as well.

  • Cooking Time: 30 min
  • Servings: 12 muffins
  • Preparation Time: 10 min
  • 1/2 cup butter {or butter substitute, such as Smart Balance light buttery spread} softened at room temp.
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup skim or 2% milk
  • 2 cups organic white whole wheat flour
  • 1/4 cup semi-sweet chocolate chips

DIRECTIONS

Preheat oven to 350



Beat eggs.


Add sugar, baking powder, salt & vanilla. Whisk. Add butter. Beat until fluffy.


Stir in milk.


Slowly fold in flour. Mix until thoroughly moistened.


Add chocolate chips. Mix.



Spoon batter into lined muffin pan, about 3/4 of the way filled. Cook at 350 for aprox 20-30 minutes, or until muffins are a golden brown. Remove from oven and allow to cool. Enjoy!
