WHOLESOME GRAIN LOAVES

Ingredients

  • 1 package (1/4 ounce) Active Dry Yeast
  • 2-3/4 cups warm Water (110 - 115 degress)
  • 1/2 cup packed Brown Sugar
  • 1/4 cup Butter (melted)
  • 1-1/2 teas. Salt
  • 1 teas. Cinnamon
  • 1 Egg
  • 4 cups Whole Wheat Flour
  • 1 cup Graham Whole Wheat Flour (or) additional Whole Wheat Flour
  • 3 to 3-1/2 cups All-Purpose Flour
  • 1 cup Golden Raisins
  • 1 cup Sunflower Kernals

Directions

  • In a mixing bowl, disolve yeast in warm water. Add the brown sugar, butter, salt, cinnamon, egg, 3 cups whole wheat flour and graham flour. Beat until smooth. Stir in remaining whole wheat flour and enough all-purpose to form a soft dough. Turn onto a floured surface, sprinkle with raisins and sunflower kernals, knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in warm place until doubled, about an hour. Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in 2 greased 9x5x3" loaf pans. Cover and let rise until double, about an hour. Bake at 350 degrees for 40-45 minutes or until golen brown. Remove from pans to wire racks to cool.

This is a TOH recipe from their Best of Country Breads cookbook. I highly recommend it :)

Makes 2 loaves

I omitted the golden raisins and the baking time for me was about 38 minutes... So keep an eye on the bread when it is getting close to the 40 minute mark...
