1 heaping cup cornmeal
¾ teaspoon soda
½ teaspoon salt
1 cup buttermilk
½ cup oil
¼ cup grated onion
1 small can cream style corn
½ Jalapeno pepper, chopped finely
1 cup grated cheese or 4 slices broken into
Preheat oven to 425F. Grease and heat skillet. Mix everything together except cheese. Pour half batter in hot skillet. Layer cheese, pour in remaining batter. Bake for 25 minutes. Let stand for 5 minutes before cutting.
