Why I Love This Recipe

I have always loved stews in the winter, They are always hardy and comforting. I played around with a basic beef stew and came up with what I call Winter Stew.

Ingredients You'll Need

1 pound beef
1 large onion
1/4 cup olive oil
2 celery ribs
2 carrots sliced
2 parsnips
2 Rutabegas
2 turnips
4 large white potatoes
1 cup of spelt or brown rice
1 cup water
salt and pepper to taste
3 cartons of beef broth/32 ounce size
1 cup semi dry red wine (optional)


cut beef into small cubes

dice onion

dice celery

put above into large pot, add olive oil and cook until beef browns

add 1 cup of water and 3 cartons of beef stock

peel and cut up turnips, potatoes, parsnips and rutabaga

add to pot except potatoes

cook for 20 minutes on a low boil

add potatoes

add the cup of spelt

cook for 30 minutes on a low boil

test vegetables and spelt and vegetables for texture

remove from heat and stir in wine

if you want a bit thicker stew, stir in 2 tablespoon of cornstarch dissolved in a small amount of water and add it in during the last 2 - 3 minutes of cooking
