Wisconsin Potato Cheese Soup

I am from WI so this is not only from my home state but a recipe I make often.

INGREDIENTS

  • 2 tablespoons butter or margarine
  • 1 1/2 teaspoons salt
  • 1/3 cup chopped celery
  • 1/4 teaspoon pepper
  • 1/3 cup chopped onions
  • 1 dash paprika
  • 4 cup diced peeled potatoes
  • 8oz shredded cheddar cheese
  • 3 cups chicken broth
  • 2 cups Milk
  • croutons
  • fresh chopped parsley,optional

DIRECTIONS

In a large saucepan, melt butter over medium-high


heat. Saute celery and onion until tender. Add


potatoes and broth. Cover and simmer until potatoes are tender, about 12 minutes.Stir in milk and seasonings. Add the cheese and heat only until melted. Top with croutons and


garnish with parsley if desired.
