1 c all-purpose flour
2 t baking powder
1 t sugar
1/4 t salt
1 c milk
1/4 c margarine or butter, melted
1 egg, separated
(We often double the recipe)
Heat the waffle iron.
Mix flour, baking powder, sugar and salt in a medium bowl.
Stir in milk, margarine and egg yolk until blended.
Beat egg white in a small bowl on high speed until stiff peaks form; fold flour mixture into egg white.
Pour about 2/3 c of the batter onto the center of hot waffle iron. Bake until steaming stops. Remove waffle carefully. Repeat with remaining batter.
