Yellow Squash Medley
1 onion sliced
1/2 red bell pepper sliced julienne style
2 oz. butter
4 yellow squash cut into wedges
salt and pepper to taste
bunch of parsley chopped
In pan saute onions and bell pepper with butter.
Add yellow squash, salt and pepper to taste and continue to saute for about 3 minutes or until tender.
Pairs Well With
You can substitute olive oil instead of butter for vegan.
