Yoko's Strawberries marinated in balsamic vinegar & Vanilla Mascarpone
Sugar about 5tbsp (adjust depending on the sweetness of berry)
Balsamic vinegar 10tbsp
Vanilla pod 1 (Scrape beans out from the pod)
Mascarpone cheese 400g
Fresh mint or sweet basil some leaves
Hull strawberries and halve them. Mix in sugar, and then add vinegar to mix gently.
Leave them for 2hours. Set aside.
Mix Mascarpone and vanilla beans together, add some sugar to sweeten.
Serve marinated strawberries over Mascarpone and top with fresh mint or basil.
If some berries and sauce are left, mash them and freeze. They become nice sorbet!

This is not even a cooking.. but still, it’s a great dessert. We all love it. Especially during the season when you can find tiny cute sweet strawberries…
