Yummy Banana Bread (Dairy free)
4 cups all purpose flour
2 tsp baking soda
1/4 tsp salt
3/4 cups Earth Balance, dairy free butter
1 1/2 cups granulated sugar
1/2 cup brown sugar, packed
4 large eggs
7 large over-ripe bananas, mashed
1 tsp vanilla
1/3 cup finely chopped walnuts
Preheat the oven to 325 F.
Use dairy free butter or oil to grease two 9x5 loaf pans
In a medium sized bowl, sift together flour, baking soda and salt.
In a large mixing bowl using an electric hand mixer, cream together the Earth Balance butter, and sugar until fluffy.
Add eggs, one at a time, beating well between each addition.
Add the mashed bananas and vanilla, beating until combined.
Using a wooden spoon, fold in the dry ingredients and the ground walnuts until just combined. (Do not over mix).
Pour batter into the prepared pans and bake until a toothpick inserted into the center of one of the the loaves comes out clean, about 1 hour to 1 hour and 10 minutes.
Transfer loaves to a wire cooling rack to cool slightly before serving.
