1 3/4 lbs. ripe italian tomatos (about 12 to 14)
2 Tbs minced fresh garlic
2 Tbs minced shallots
10-12 fresh basil leaves (coarsely chopped)
1 tsp fresh lemon juice
salt and pepper to taste
1/3 cup extra virgin olive oil
1/4 cup extra virgin olive oil
3 garlic cloves, slivered
Crusty French bread, sliced
Dice tomatoes and place in bowl.
Add garlic, shallots, basil, lemon juice, salt, pepper and 1/3 cup EVOO, mix gently and set aside - Let marinate for at least one hour.
Heat 1/4 cup EVOO in skillet.
Saute slivered garlic until golden about 2 or 3 minutes.
Discard garlic and reserve the oil.
Toast the bread lightly. Bursh with garlic flavored oil.
Spoon tomato mixture over bread and serve immediately.
The tomato should be at room temperature
