Zach's Famous Chicken Chili

Why I Love This Recipe

I sort of invented this one day and really liked it!


Ingredients You'll Need

64 oz. chicken broth
2 lb. boneless/skinless chicken breasts
1 1/2 can kidney beans
1 1/2 can black beans
1 can great northern beans
2 cans Rotel tomatoes (medium or hot, depending on your preference)
1 Tbsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. onion powder
10 cayenne pepper drops (optional)
salt and pepper for flavor
2 bay leaves
1/2 c. dry rice


Directions

Fully cook chicken in broth. Remove and shred. Add chicken and broth to slow cooker. Blend Rotel tomatoes and add to slow cooker. Add all other ingredients and cook on high for 4 hours. When the rice is fully cooked, the chili is ready. Add more chili powder, salt, and pepper for your preference. Best served with tortilla chips or cornbread.
