ZACH'S LAMB MEATBALLS

Ingredients

  • Meatballs:
  • 1 lb. ground lamb
  • 2 tsp. ground coriander
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. white pepper
  • 1 1/2 tsp. cumin
  • 1/4 c. bread crumbs
  • 1 egg
  • Sauce:
  • 1/4 tsp. saffron
  • 1 14.5 oz can diced tomatoes
  • 1/2 c. red wine
  • 1/4 c. diced red onion
  • 1/2 c. diced yellow (or your preferred color) bell pepper
  • 1/4 c. flour
  • water

Directions

  • Combine all meatball ingredients in a bowl
  • Form the meatballs to your preferred size and place in crock pot
  • Add the can of diced tomatoes, red wine, onion and peppers to the crock pot
  • Cook for 5-7 hours on low
  • To thicken sauce, mix 1/4 c. flour with a little water to form a paste and mix in
  • Serve with rice, couscous, or whatever else you prefer!

Notes

I like lamb meatballs, and I just wanted a quick tasty version to throw together.
