  • 2 Chicken breasts (sliced or diced)
  • 1/2 tsp ground chipotle pepper
  • 1/4 c white wine
  • 1/2 large onion, diced
  • 1 yellow pepper, diced
  • 1 14.5oz can Fire Roasted tomatoes
  • olive oil
  • salt and pepper to taste


  • Sautee the onion and yellow pepper in olive oil until softened, about 5 minutes
  • Add the white wine to the peppers and onion and cook for about 30 seconds to 1 minute, then add the chicken
  • Cook until the chicken is cooked through, then add the seasonings and fire roasted tomatoes
  • Simmer for 15 minutes to reduce some of the liquid


I thought this would make a good, simple, meal, and it did!
