Zesty Bang Bang Shrimp
For the Bang Bang Sauce
5 tablespoons mayonnaise
3 tablespoons Thai Sweet Chili Sauce
1/2 teaspoon Sriracha, or to taste
For the Shrimp
1 pound medium shrimp, shelled and deveined
1/2 teaspoons salt
1/4 cup cornstarch
1 tablespoon olive oil oil
3 cups shredded iceberg lettuce
4 scallions, finely diced
1. In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside.
2. Sprinkle shrimp with 1/2 teaspoons salt then coat shrimp with cornstarch, mixing well to coat. Heat olive oil in a large skillet
and add shrimp. Cook until cooked through (about 3 minutes), tossing a few times.
3. Remove cooked shrimp from pan and combine with the sauce, and mix well to coat. To serve, place and scallions shrimp on bed of lettuce with wedge of lemon or lime.
