ZESTY PEPPERONI PENNE CASSEROLE

Ingredients

  • 1 lb. lean ground beef
  • 1 container (12 oz.) ricotta cheese
  • 1 Jar Spaghetti Sauce (28 oz)
  • 1 Package Sliced Pepperoni (I used Hormel which comes with two "packages" together-only one is needed for this recipe)
  • 1 Cup Mozzarella
  • 1 Box or Bag Pasta (16 oz) ( I use Penne)
  • Salt, Pepper, Oregano, Garlic and Onion Powder to taste

Directions

  • *I adapted this recipe from a "pepperoni pasta casserole" one from Taste of Home. It is a filling pasta casserole that we always eat as a main dish with some salad and garlic bread!
  • INGREDIENTS:
  • -1 lb. lean ground beef
  • -1 container (12 oz.) ricotta cheese
  • -1 Jar Spaghetti Sauce (28 oz)
  • -1 Package Sliced Pepperoni (I used Hormel which comes with two "packages" together-only one is needed for this recipe)
  • -1 Cup Mozzarella
  • -1 Box or Bag Pasta (16 oz) ( I use Penne)
  • -Salt, Pepper, Oregano, Garlic and Onion Powder to taste
  • DIRECTIONS:
  • 1.) Brown Ground beef; Drain; Season with above seasonings
  • 2.) Meanwhile, cook pasta according to package directions.
  • 3.) Mix together spaghetti sauce, ricotta cheese and half of mozzarella. Season mixture as desired.
  • 4.) When meat and pasta are ready, mix in with ricotta mixture.
  • 5.) Spread in a lightly greased 2 quart casserole dish.
  • 6.) Top with pepperoni slices and remaining mozzarella cheese.
  • 7.) Bake at 350` for 30-40 minutes or until lightly browned and bubbling.
