Zesty Tomato basil Soup
5 1/2" slices of stale Italian bread
3 tbsp extra virgin olive oil
4 garlic cloves diced
1 small can Italian plum tomatoes diced and seeded (save juices)
4 cups chicken stock
1/2 tsp salt and black pepper
8 fresh basil leaves
extra virgin olive oil for drizzling
Heat the olive oil in pot over medium heat. Add garlic and cook til golden, about 5min
Add tomatoes and their juices to pot.
Bring to a boil, stirring occasionally.
Add stale bread and stock and return to a boil.
Sprinkle salt and pepper and let simmer.
After 30 minutes add the basil leaves.
drizzle olive oil over it.
Makes 8 servings
